Interesting… We were shopping last night and we found pre-packaged overnight oatmeal. We haven’t actually tried them yet, but they are here. $2 a piece on sale. I’m not really sure if that is exactly cheap… but the idea did poke at me, so I did some digging. There are a crap ton of recipes on line for do it yourself overnight oatmeal.
It says at least 2 hours to start to sog up the liquid. All night is better. With fresh fruit it can be made up to 2 or 3 days ahead. With dried fruit or just not fresh fruit it can be kept 7 to 10 days. The longer it rests (I’m thinking up to about 8 hours then maybe not much more) the creamier and yummier it is. I haven’t tried some of the suggestions but I’m thinking I might… Chocolate peanut butter oatmeal… I’m not sure if it sounds good or not, but I’m thinking that nothing that is peanut butter and chocolate can be all bad.
I’m thinking that, it that if this works I have a new post workout breakfast…. or a different lunch. And it’s kind of healthy.
Making a week’s worth on Sunday means it is quick and easy the rest of the week, too.
2/3 cup oatmeal
1/3 cup greek yogurt
1/3 cup either almond milk or evaporated milk
1/4 cup milk
1 T chia seeds
a handful of dried fruit, coconut, peanut butter, choc chips, fresh fruit, or whatever
A tablespoon, roughly, of honey, brown sugar, maple syrup
mix up in a pint canning jar
put in fridge
